Perfect Pesto Uses Bounty from Raised Bed Gardens

(HIT) - "Wondering what to do with that all that fresh, leafy basil from your garden? My perfect pesto has lots of natural flavor and is a very easy light summer meal that takes only minutes to assemble," says Patti Moreno, The Garden Girl, a sustainable gardening expert and host of the television show Farmers Almanac TV.
The Garden Girls Perfect Pesto

4 cups fresh Genovese basil
6 cloves garlic (or one giant elephant garlic)
1/3 cup toasted pine nuts
3/4 cup grated Parmesan cheese
Juice of one lemon
1 cup olive oil
Salt and pepper to taste
Fresh hot pasta
Combine the basil, garlic, pine nuts, Parmesan cheese and fresh lemon juice in a blender. Pulse the blender until the ingredients are mixed together. Add salt and pepper to taste. Mix again. Begin drizzling in the olive oil while the blender is on continuously. Add enough olive oil to bring the mixture to a creamy consistency. Prepare the pasta according to package directions. Top with freshly made pesto.
Pattis Recipe Tip: Make enough pesto to freeze in an air-tight container and use later.
